Haute cuisine is only half the story of French cooking, the other half is found among rustic traditions of simple, but delicious food. The remote regions of France such as Burgundy are rich, and varied in gastronomic traditions. A growing interest in wholesome food has brought simple cooking into focus in recent years and in tonights class we will explore classic, seasonal, simple and delicious recipes of that region.
