Capitola Chipotle Adds Tofu Menu Option

The new Sofritas vegetarian menu item has been tested in San Francisco and now is moving to the rest of the northern California.

Chipotle Mexican Grille, the health-conscious fast food chain, is adding a permanent menu item to its Northern California locations, including the one in Capitola, the company announced Wednesday.

Sofritas — shredded organic tofu braised with chipotle chilis, roasted poblanos and spices, has been tested at seven San Francisco locations to great success.

"Chipotle expects Sofritas to appeal to vegetarian and vegan customers, as well as those who are looking for an exciting new taste," the company said in a news release.

"We are so excited to be able to offer something new to accommodate our vegetarian and vegan clientele — and we believe that once other customers taste it, it’s deliciousness will speak for itself,” said Steve Ellis, Chipotle founder, chairman and co-CEO.

The organic tofu is being supplied by Hodo Soy, which is known for its non-GMO tofu made in Oakland.

Sofritas will be made available as an option for burritos, tacos, burrito bowls and salads. Before Sofritas, Chipotle tested what they called "Garden Blend," but ditched the idea when they found customers to be far more enthusiastic about the tofu option.
